Empyrical Cider’s Methode is a Perry Pear Cider, an elevated pear cider made by flavoring a cider with concentrated pear juice from a rare perry pear variety.
Methode starts with a Bittersharp blend of cider apple varieties including Golden Russet, Winesap, Spitzenberg and Muscadet de Bernay. The cider is bottle conditioned dry, then disgorged and dosaged with cryo-concentrated "Barnet" perry pear juice.
Tasting notes: The dosage of concentrated sweet pear juice leaves the overall cider finished semi-dry. The mild astringency of the heirloom and French apple varietals combined with the sweetness of the fresh Barnet deliver an homage to the fruit-cocktail flavors of grade school, or the scrumping of a neighbor's almost-ripe summer pear.
