Haykin Cider's Front Range Méthode Ancestrale is a special, limited release from Haykin. Each year we travel to CiderCon - the cider industry's national convention - where we have the opportunity to mingle with many of the best cider makers from around the U.S. As you might imagine, there are several bottles shared throughout the week - and this Front Range cider from Haykin was a standout amongst standouts.
Named Front Range in honor of the cider orchards Haykin works with from Colorado's Front Range region, where hundreds of heirloom cider apple varieties are grown - most of which are represented in this bottle. Apples grown at Masonville Orchards, Three Trees Orchard and foraged apples. Bottled as a Pet Nat, then aged for 42 months sur lie (meaning on the fine lees, or spent yeast that remains in bottle).
Tasting Notes: The result is a flavor profile that is soft and refined. Incredible aromatics sparkle out of the glass with notes of fresh bittersweet apples, soft butterscotch, lime zest, a bit of honey and hay. It is slightly off dry, but the touch of sweetness is cut through quickly by the lively sparkle and tannins.
